What will you eat?
I will mainly and essentially eat local food. I am a Rebirth/Third Paradise ambassadress and I lead the project Let Eat Bi. This small association focuses on natural food, sustainable agriculture and all good territorial practices in these areas. With this in mind, we propose a weekly market, projects like Abandoned Lands and activities like the Green Academy; we carry out many initiatives, organised to ensure that more and more people become aware of the importance of issues related to nutrition.
I have learnt a lot about how to best eat and I have come to the conclusion that it doesn’t matter what we eat, if we are vegetarians, vegans, omnivores, or if we eat dairy or carbohydrates. We often talk about ‘excluding’ something from our diet, but ‘non-consumption’ is not important, what counts is eating local. An example? We can eat dairy products: in the Biellese territory we produce goat cheese of exceptional quality, made from the milk of goats treated and fed well. We can also eat meat, if the animals lived well and happily without being treated with antibiotics. Not only that: we can also consume carbohydrates, as long as they are whole and therefore not refined.
I will therefore eat all that is local, in balance and moderation. Everything must be done in moderation: going back to the previous examples, I can’t eat too much goat cheese or too many carbohydrates, I will have to regulate my nutrition. This is a fundamental concept for everyone, not only for me, but for the whole society. We can all change the way we eat, starting from this very moment.
In addition to being local, food also needs to be seasonal, but these two factors are linked together: if I eat local fruit and vegetables, they are certainly also in season. Furthermore, the food must be natural, so I can’t, for example, use pesticides on the tomatoes in my garden and eat them only because they are local, I will have to grow them in an organic and healthy way, for my benefit and that of the earth. If I were forced to live in a big city, without being able to get my provisions from local producers, I would choose seasonal fruit and vegetables and read all the labels when I do my shopping, making sure I buy Italian or regional products.
I will therefore eat local, seasonal and natural food.
